The Concessions Manager - is responsible for all aspects of Concessions operations, including multiple-concept food courts, permanent stands, portable carts and kiosks, in-venue restaurants, private clubs and upscale suite catering.

The Concessions Manager - will develop, communicate and implement seasonal and long-term business strategies to drive Concessions sales revenue and meet or exceed the unit's overall financial goals. They will maximize sales by ensuring that guests receive an exceptional overall experience and that service expectations are met or exceeded within all unit outlets.

Responsibilities:

In collaboration with General Manager, establish short and long term financial and operational plans:

  • Monitor the on-going performance through analysis of customer satisfaction and financials; Identify growth opportunities within department.
  • Perform duties according to Sodexo policies for the ordering, receiving, storage and distribution of food for concessions sales.
  • Develop and implement systems to ensure accurate and timely production to effectively service guests and control food costs.
  • Ensure all cash handling and credit transaction procedures are in effect at all times.
  • Assist with daily and monthly inventories.
  • Recommend and develop programs to positively impact customer satisfaction and operational excellence.
  • Intervene in instances of guest dissatisfaction. Work diligently to resolve issues and address concerns so that no guest leaves unhappy.
  • Maintain positive, on-going communication with General Manager, Director of Operations and fellow department managers; Relate information regarding guest feedback or complaints and any issues regarding inventory, equipment or facilities.
  • Make proactive suggestions for improving the customer experience in Concessions outlets.
  • Monitor compliance of health and sanitation rules and regulations and ensure that procedures for responsible alcohol service are in place.
  • Create departmental work schedules according to projected business volume, the unit's established labor standards and terms of collective bargaining agreement.
  • Hire, train and monitor the performance of Concessions department employees; Develop each to their potential.
  • Support proactive human resources practices to ensure motivation and compliance.
  • Coach and support the Concessions team to be customer-focused, innovative, fast and team-oriented in their work.
  • Prioritize, delegate, assign daily tasks and organize duties according to Sodexo procedure for opening and at start and close of business.
  • Be fully knowledgeable of Concessions menus and procedures; Assist in educating staff regarding food product knowledge and serve as an information resource for any questions they may have. Hire, train and monitor performance of key employees; Work to develop each to their maximum potential.
  • Promote, drive and maintain a focus on workplace safety across all departments, Audit compliance with Workers Compensation procedures.
  • Ensure adherence to OSHA standards, local Health Department rules and regulations and Sodexo standards for safe food handling and sanitation.
  • Focus on employee experiences, fostering teamwork, building strong team relationships and sharing information to build team awareness.
  • Maintain visible presence with line staff to promote operational awareness and effective communication; Drive quality and guest and employee satisfaction through continuous walk-thrus of all operational areas.
  • Model Sodexo culture, values and standards to Concessions staff as it relates to their respective functions.
  • Update personal skills and knowledge by participating in educational opportunities for self-development, reading professional publications, maintaining personal networks and participating in professional organizations.

Basic Qualifications:

  • Bachelor's degree and/or appropriate combination of education and experience to support on-the-job effectiveness.
  • A minimum of 2 years of previous leadership experience within a diverse food and beverage environment, to include management of a large staff and focus on exceptional client and customer service.
  • Venue catering/concessions experience and multi-site experience strongly preferred, as this position will have responsibility over multiple locations including cafes, coffee shops, bistros and convenience locations.
  • Strong working knowledge of food safety, sanitation, and general workplace safety standards with knowledge of Health Department requirements.
  • Demonstrated financial acumen; P&L accountability and/or contract-managed service experience is highly desirable
  • Technologically savvy, with high proficiency in all Microsoft Office programs.
  • Demonstrated success in interfacing with a variety of organizational functions and divisions to accomplish tasks.
  • Flexibility, ability to work extended or irregular hours to include nights, weekends and holidays.
  • Must have a valid driver's license.

  • Proven ability to work effectively with all levels of staff and management; Ability to promote and participate in team environment concepts.
  • Self-starter who can work independently and on several tasks/projects simultaneously, and who can contribute to functional areas of the business outside of retail operations.
  • Ability to communicate effectively both orally and in writing.
  • Initiative in identifying and resolving problems timely and effectively.

Other Requirements:

  • Must be able to work in extremes of cold to heat.
  • The employee must regularly lift and/or move up to 50 pounds and carry approximately 20 feet.
  • Ability to physically walk approximately one-fourth (¼) of a mile and the circumference of business units several times a day.
  • Specific vision abilities required by this job include close vision, color vision, depth perception, and ability to adjust focus.
  • Must be able to perform repetitive motions.
  • Must have ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions.
  • Employee must be able to operate in an environment with moderate noise
  • Other lifting or physical requirements as added from time to time, or as require
  • Push and Pull equipment such as: Queen Marys, merchandise racks, carts and flat beds the distance of up to .4 miles.
  • Must be able to sit and/or stand for prolonged periods of time.
  • While performing the duties of this job, an employee is regularly required to stand, use hands to finger, handle, or feel, reach with hands and arms, and taste or smell.
  • The employee is occasionally required to stoop, kneel, or crouch.
  • Must be able to withstand moderate to high noise levels.
  • Ability to multitask in an office or operations setting.
  • Ability to operate telephone and to talk and/or hear in a setting where noise level is moderate to high.
  • Ability to sit, walk, stand, bend, and twist on an intermittent or continuous basis.
  • Ability to, grasp, push, pull objects such as files, file cabinet drawers, and reach and lift overhead.
  • Ability to operate a desktop computer or register terminal.
  • Ability to understand written information.
  • Other lifting or physical requirements as added from time to time, or as required to perform the essential functions of this job.
