Sodexo is seeking an Executive Chef 3 for University Hospitals Cleveland Medical Center in Cleveland, Ohio. University Hospitals Cleveland Medical Center is the flagship hospital for the UH System. This is a high impact and highly visible position. This position will work primarily out of University Hospitals Cleveland Medical Center.

The Executive Chef 3 for University Hospitals will be responsible and oversee the majority of high level/special event catering operations, food demonstrations, menu development and maintain catering management software for University Hospitals. Implements business practices in order to uphold UH and Sodexo’s mission and values. This position reports directly to the System Culinary Director. This position requires a cooking test to evaluate candidate’s ability to effectively use culinary techniques, ingredients and culinary skills.

Job Responsibilities Include but are not limited to:

  • Implementation and standardization of all culinary systems for catering operations.
  • Routinely conducts food demonstrations in conjunction with registered dietitians.
  • Creates health-based recipes for food demonstrations.
  • Plans, organizes, transports foods and presents food demonstrations.
  • Plans and directs for events, meetings and special functions.
  • Directs chefs, cooks, bartenders and front of the house staff and collaboratively works with other managers/chefs on events.
  • Work with clients on developing menus, rentals orders, floral arrangements, tents, etc.
  • Must utilize all available resources to accomplish caterings.
  • Routinely updates menus to keep up with current trends.
  • Must have the ability to work with detailed clients and maintain professionalism and composure.
  • Maintain and create interpersonal relationships with clients.
  • Able to create accurate invoices, quotes and bill clients.
  • Able to create workflows, spreadsheets, standardization matrix, prep list, etc.
  • Driving personal vehicle is an essential function of position. Mileage will be reimbursed.
  • Adheres to HACCP practices when transporting food offsite.
  • Works with vendors, purchasing manager and chefs on placing orders for events.
  • Staffing for events to include chefs, cooks, front of the house, bartenders, etc.
  • Hours vary and some weekends.

The skillsets below are also necessary in this high profile role:

  • Energetic, polished culinary professional with high end catering and dining experience and a passion for culinary arts.
  • Must have good presentation skills.
  • Experience with authentic global cuisine is highly desirable.
  • A strong production culinary background, ideally in an up-scale restaurant/retail/catering environment.
  • Menu planning experience and a strong understanding of current culinary trends.
  • Ability to effectively communicate clearly and effectively to multiple audiences and develop strong relationships with customers.
  • Self-motivated, multitask and can work independently.
  • Strong understanding of forecasting, food cost management, purchasing, inventory and labor management concepts.
  • Ability to successfully lead, manage, develop and train a team.
  • Ability to creatively and effectively problem-solve and manage projects.
  • Proficient computer skills as well as exceptional organizational and customer services skills. Microsoft Excel, Word, Outlook, and Power Point.
  • Servsafe certified as well as working knowledge of HACCP guidelines
  • C.E.C. preferred.

While the budgeted range for the position is posted, Sodexo salary offers are based on a candidate's specific criteria, like experience, skills, education and training.


Qualifications & Requirements

Basic Education Requirement - Bachelor’s Degree or equivalent experience

Basic Management Experience - 3 years

Basic Functional Experience - 3 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
