The San Diego Convention Center is located on sparkling San Diego Bay in the heart of a vibrant downtown. Abundant, flexible space and five-star service make the San Diego Convention Center the meeting planner's choice for hosting major conventions, trade shows, meetings and special events. The San Diego Convention Center has 2.6 million sq. ft. to include 72 meeting/banquet rooms, eight exhibit halls, two ballrooms and a special events area - the Sails Pavilion, 138-seat capacity onsite restaurant and 36-seat bar, 8 concession stands in exhibit halls, 2 full-service kitchens, portable specialty services and 3 Starbucks lobby operations. Some of the many types of events offered at the San Diego Convention Center include the annual Comic Con and ESRI shows, full service plated dinners and buffet & reception events.

We are currently seeking a Garde Manger Supervisor at the San Diego Convention Center.

Position Summary

The Garde Manger Supervisor leads the preparation and execution of all cold kitchen items including salads, composed cold plates, charcuterie, cold hors d'oeuvres, and specialty displays. This role supervises culinary staff, ensures consistency and quality, maintains food safety compliance, and supports overall kitchen operations.

This position reports to the Executive Sous Chef / Executive Chef.


Essential Responsibilities

  • Supervise and direct Garde Manger culinary staff during production and service

  • Oversee preparation and presentation of all cold food items

  • Assist with menu development, costing, and labor management

  • Monitor food quality, portioning, and plate presentation standards

  • Maintain proper food storage, labeling, and HACCP compliance

  • Manage inventory, ordering, and product receiving

  • Ensure compliance with all health department and Sodexo Live! standards

  • Support other kitchen stations as business demands require


Required Qualifications

  • Minimum 3 years of Garde Manger experience in a high-volume hotel, resort, or convention center

  • Previous supervisory or lead cook experience preferred

  • Strong knife skills and advanced cold food preparation techniques

  • Ability to lead a team in a fast-paced environment

  • Strong communication and organizational skills

  • Ability to lift 35 lbs and work in variable temperatures


Preferred Qualifications

  • Associate's Degree in Culinary Arts

  • ServSafe Certification

  • Experience in large-scale banquet or convention food production


Schedule Requirements

  • Must be available for days, nights, weekends, holidays, and extended shifts based on event schedules


Work Environment

  • Wet floors, temperature extremes, and high noise levels

  • Fast-paced, high-volume production kitchen
