Location: We are seeking an experienced Kitchen Manager for a new concept new to the remodeled Nashville Airport.

Principal Function:

The Kitchen Manager will wear many hats, in that their responsibilities touch all departments and are responsible for supporting all aspects of assigned venue operations. He or she will partner with the General Manager to communicate and implement long-term strategies to meet or exceed the kitchen's overall goals.

The Kitchen Manager will be responsible for ensuring product availability, quality, and cost effectiveness. They will oversee purchasing-related activities, to include ordering, receiving, inventory management, equipment maintenance and supervision of kitchen staff for food preparation and execution during large scale events. Kitchen cleanliness and food safety will be a strong focus of this position. The Kitchen Manager will also assist the General Manager in the supervision of the front of house service area during large scale events, managing staff and guest satisfaction with the ability to problem solve in a fast-paced environment.

Essential Responsibilities:

  • Develop and implement systems to ensure accurate and timely production to effectively service guests and control food costs.
  • Timely as needed inventory inspections.
  • Prepare labor schedules and ensure that product, supplies and equipment are adequately stocked based on event specifications and anticipated attendance.
  • Purchase day-to-day items at the most cost-effective pricing; schedule drop off, pick up, returns and exchanges.
  • Control inventory of all supplies and products purchased; Plan and supervise receipt, storage and distribution of supplies, specialty items and equipment.
  • Ensure that product is properly stored and secured to minimize waste and shrinkage; Be thoroughly familiar with OSHA and ServSafe guidelines and ensure they are enforced throughout all receiving and food storage and preparation areas.
  • Setup and implement purchase order system and logs using EMS software program.
  • Prepare schedules and assign general responsibilities and special projects to subordinates.
  • Accomplish purchasing and organization mission by completing related tasks as needed.

Qualifications/Skills:

  • A minimum of 3 years of management of a staff and focus on exceptional client and customer service and development of staff.
  • Focus on forecasting sales, reviewing and updating pars with the GM, quality control, training and development, sanitation and organization.
  • Strong working knowledge of food safety, sanitation, and general workplace safety standards with knowledge of Health Department requirements.
  • Demonstrated financial acumen; P&L accountability and/or contract-managed service experience is highly desirable.
  • Technologically savvy, with high proficiency in all Microsoft Office programs.
  • Demonstrated success in interfacing with a variety of organizational functions and divisions to accomplish tasks.
  • Flexibility, ability to work extended or irregular hours to include nights, weekends and holidays.
  • Proven ability to work effectively with all levels of staff and management; Ability to promote and participate in team environment concepts.
  • Self-starter who can work independently and on several tasks/projects simultaneously, and who can contribute to functional areas of the business outside of retail operations.
  • Ability to communicate effectively both orally and in writing.
  • Initiative in identifying and resolving problems timely and effectively.

Other Requirements:

  • The chosen candidate will be required to live locally and this position is not eligible for remote accommodations.
  • Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly quartered environment.

Hours may be extended or irregular to include nights, weekends and holidays.
