Location: We are seeking an experienced Sous Chef I for the Keystone Centre in Brandon, Manitoba.

The Keystone Centre sits on approximately 90 acres in Brandon's busiest commercial district and offers 540,000 square feet of multi-use all under one roof.

The operations of the Provincial Exhibition, Brandon Wheat Kings and Brandon Curling Club are located within the Keystone Centre. Boasting over 1,500 event days annually, the Keystone Centre hosts a diverse array of activities providing a large component of the social, recreational, cultural and agricultural fabric of the area, and is one of Brandon's largest economic catalysts.

Principal Function:

The Sous Chef I is the first level of management in a Sodexo Live! commercial kitchen. The Sous Chef I assures that foods are prepared using fundamental cooking techniques, seasoned for maximum taste and flavor, and served in an aesthetically pleasing manner.

The Sous Chef I directs all aspects of foodservice production and service, ensuring that approved food safety and sanitation guidelines are followed. The Sous Chef I directly supervises the preparation and production of the unit's menus and manages a shift or station in the hot kitchen, the cold kitchen and/or the bakery and pastry shop.

The Sous Chef I is responsible for training, mentoring and helping to develop other Culinarians, and for monitoring and organizing the flow of activity within the kitchen in a way that complements and supports the overall operation.

Essential Responsibilities:

  • Participate as part of Culinary Leadership Team to manage a culinary department for the preparation of foods served to the customers in a consistent and timely manner.
  • Ensure Kitchen Safety and Sanitation conforms to all Sodexo Live!, regulatory, and governmental standards to provide a safe workplace producing high quality food products.
  • Contribute to goal of 100% customer satisfaction through personal commitment to customer service and leading the culinary team by example.

Qualifications/Skills:

  • Formal training at an accredited culinary school. Red Seal Certification preferred.
  • Experience in Banquet events in a Facility that holds multiple events at once.
  • 3+ years experience in a leadership level Culinary position.
  • BA/BS Business or Hospitality Degree from an accredited college or university preferred.
  • Up to date Food Safe Certification and strong working knowledge of local health regulations.
  • Demonstrated financial acumen with strong background in P&L management.
  • Strong leadership and decision-making skills, with proven ability to promote and participate in a team environment.
  • Must be a highly organized, detail-oriented individual, with the ability to handle many tasks at one time, and work to numerous deadlines at once.
  • Strong focus on service excellence and a positive attitude that contributes to collaboration and team work.
  • Computer proficiency specifically in Outlook, Word and Excel.
  • Ability to understand written and oral direction and to communicate same with others.

Other Requirements:

  • Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly-quartered environment.

Hours may be extended or irregular to include nights, weekends and holidays.
